Today I celebrated my 11th year in my company and spent 2 days baking a variety of pastries
- strawberry yogurt mousse twisters with velvet chocolate cover
- mango & passion mascarpone spheres with mirror glaze
- banana caramel chocolate mousses with velvet chocolate cover
- mini lemon tart with Italian meringue
- mini star anise chocolate ganache tarts
- opéra layered cake with coffee buttercream and chocolate ganache
I want those chocolate squares 😋
You have very good taste! It’s also my favorite cake above all, I made it 8 times in the past 12 months.
It’s not a very difficult recipe, mostly work to assemble everything neatly, and you need a kitchen mixer to make the buttercream.

It’s a web agency in southern Baden, but I work from home so the baking is usually just once a year, not sure it’s worth it ^^

Yeah 16 hours in the kitchen for 30 minutes of celebration but I enjoyed making them, and when they’re gone I have a reason to bake again!

Thank you so much, it takes some training to make them look right, but what I try to make almost always taste good, even if it’s looking like a wreck, so there’s always a sweet treat at the end :)

Next you should mix up the flavors. Make the mangoes taste like banana etc…
