The Art of Wheelbuilding by Gerd Schraner, teaches how to build bicycle wheels.
You’d be shocked at what military instruction books you can find online.
This is one of the most in-depth guides to lockpicking, and why it works. It’s good for understanding the theory, but it’s still takes a lot of hands-on practice. As another commenter mentioned, it also helps to look up some YouTube videos.
I’ve also seen some pdfs online about dumpster diving, but as I haven’t read them, I can specifically recommend any of them.
Not what you asked, but I think watching YouTube videos is the best way to learn how to pick locks, at least the theory. To actually do it and well, you’ll still need to practice…
